Grilled Bacon Chops

with Creamy Savoy Cabbage & Mustard Mash

[TBC] A modern twist on the classic bacon buttie.

 
 

[TBC] Smoked back bacon encased in a warm naan with lashings of spiced chilli jam. Serves 1

 
 

Ingredients:

4 Unsmoked Bacon Chops

1 savoy cabbage

60ml cream

50g of butter

Grated nutmeg

Seasoning

1 1/2kg potatoes, cut into chunks

100g butter

100ml milk

1 tsp English mustard

METHOD:

Firstly make the mustard mash, Tip the potatoes into a large saucepan, cover with boiling water and boil for 20 mins or until soft.

Meanwhile slice the savoy cabbage, place into a large saucepan cover with boiling water and boil for 9-10minutes until soft, return to the hot pan, add the butter, cream and season to taste adding a pinch of nutmeg at the end. Cover to keep warm until serving.

Pre-heat to grill to a medium heat, place bacon chops on tray and grill, turning every 2-3 minutes until golden and juices run clear

Drain the potatoes in a colander and leave to steam-dry for a few moments before putting them back in the pan. Add the butter, milk and mustard, season well, then mash thoroughly until creamy. Cover to keep warm until serving.
